Beer Biscuits

You will need:

3 slices of bacon

Cooking Oil

2 cups Self-rising Flour

2 Teaspoons Sugar

2/3 Cup of Beer

Large Cast Iron Skillet

Cook Bacon in skillet and drain? save the drippings. Add Cooking oil to make a full 1/4 cup. Combine flour and sugar. Add oil, beer and crumbled bacon. On a floured surface roll to 1/2 thickness, cut with a floured biscuit cutter or iced tea glass. Arranged in skillet. Bake in 450 degree oven until golden brown. Makes 10 Biscuits.

Serving suggestion:

Top with Tomato Gravy or fill with Sliced fresh Tomatoes.

Tomato Gravy:

You will need:

3 tablespoons cooking oil or bacon drippings

3 tablespoons flour (plain or self rising)

1 medium can diced or stewed tomatoes

salt and pepper to taste.

 

Brown flour in oil or drippings. Add tomatoes and bring to a boil and then simmer for 15 minutes, stirring constantly. Add Salt and Pepper to taste. Serve over rice or biscuits.
